Directions

  1. Cook ravioli according to package directions.
  2. Meanwhile, in a large saucepan, add 3 tablespoons olive oil, red onion, and tomatoes. Saute over medium heat for 3 to 4 minutes. Add spinach and cook until just wilted, about 2 minutes; remove from heat.
  3. Add ravioli to pan; drizzle with remaining 1 tablespoon olive oil. Season to taste with salt and pepper, garnish with Hy-Vee grated Parmesan cheese, if desired.
